Vegan Nacho cheese

This stuff makes almost anything magical, is super duper easy to make, and comes from whole ingredients.  This is a specially release raw sauce and cheese recipe from Cafe Gratitude and Gracias Madre.

  • 4 cups soaked and rinsed cashews (rinse, then soak 8 hours)
  • 2 TBL. nutritional yeast
  • 1 TBL. chipotle powder
  • 1 TBL. salt
  • 2 TBL. soy lecithin
  • 21/2 cups water
  • 1/4 cup lemon juice
  • 1 tsp. chopped garlic

Blend all well in blender extra well.  I like to use my jar trick so that there’s no waste of sauce on the sides of the blender, and you’re ready to store it right away.
